It is time for a sensible and easy snack.  I love these crackers – they are simple and quick to make, taste great and are incredibly healthy.  Hemp seed is a real nutritional powerhouse.  They are high in nutritional value and contain 20 different  amino acids and all nine of the essential amino acids (like flax). And, don’t get it confused with marijuana – they are two different (albeit, related animals). Makes approximately 50 – 60 crackers

½ c. hemp seed

1½ c. almond meal

2 Tbs. flax seed

2 Tbs. sunflower seeds

½ tsp. pink salt

2 Tbsp. nutritional yeast*

½ tsp. each onion and garlic powders

2 Tbsp. olive oil

4 Tbsp. cold water

  • Preheat oven to 325 degrees.
  • Mix all ingredients together, adding in olive oil and water last. Let sit for about 10 minutes.
  • Take half the batter and roll into a ball and place on parchment paper that will fit a flat baking (cookie) sheet. Roll thin between two pieces of parchment paper to desired thickness (mine is generally about 1/8 inch thick).
  • Remove the top parchment paper, place the bottom parchment paper with cracker dough onto your baking pan. Score with a knife or pizza cutter to make cracker shapes.
  • Bake for 15 – 20 minutes depending on thickness. Watch closely as they can turn very brown in a matter of minutes.
  • Repeat, using the remaining batter to make a second batch of crackers.
  • Break apart, cool, and enjoy!

*Nutritional yeast is a deactivated yeast that is sold as yellow flakes or powder. It used to be hard to come by – now, it is available at most natural food stores, and on-line. Its taste is reminiscent of cheese and is used by many vegans as a cheese replacement. Also, if you want to cut down on dairy, it is a good substitute. Amazon has a number of good vendors for it (Bob’s Red Mill; Now; Frontier Foods) and it keeps forever. They are also a good source for hemp seeds – I love Manitoba brand.
