I love autumn – cooler weather (although it is still pretty warm here in Texas), football, the colors of the turning leaves, and of course, more robust food and flavors.

Colors of AutumnBut, with autumn also comes lots of other things to do, meeting to attend, and school activities are in full swing (including the need to transport the kiddos to all their afterschool activities). It stands to reason that many families grab take-out meals or use ‘kit dinners’ – there is just no time to cook.

That is where the slow-cooker comes into play.  It went out of favor awhile back – but, it is staging a comeback.

I love using mine – and, even though I have more time than most to cook – I love being able to put ingredients in and have the aromas fill the house during the day.

To get us going this week – here are some great recipes that I have used in the past – try them and see what you think!

Tomatillo and Pork Chili Verde (from PaleOMG)

For this one – I made the sauce the weekend before and had all ingredients ready to go the morning I put this together.

Simple Slow-Cooker Chicken Recipe (from PaleoLeap)

This is great to make ahead as well.  You can use the chicken in so many different dishes throughout the week (salads, wraps to name a couple).

Slow Cooker Jambalaya (from Chris Kresser)

I love jambalaya! This recipe is wonderful and takes a bit of prep (which can be done earlier in the week).  But, the aroma is wonderful!
