Prebaked Pumpkin and Seeds

It is November, and now – I am thinking about pumpkin. I am taking advantage of pie pumpkins – I love these little gems as they make the best pumpkin puree!  We all know that pumpkin flesh can be used in so many different ways – (pies, breads, soups and so on).  But, most of this fruit can be used) and has an incredible amount of nutritional value – so, let’s investigate!

That bright orange color that you see signifies that the pumpkin is loaded with an important antioxidant, beta-carotene,  which converts to vitamin A in the body.  Research suggests that this may help reduce the risk of developing heart disease and cancer.

What else?

 

First – pumpkin pulp is high in fiber, vitamins, minerals and anti-oxidants.

·         As already mentioned, pumpkin is high in Vitamin A (and the precursor α and ß-carotenes) which is a great anti-oxidant that is used in keep your skin young and mucus membranes healthy.  Certain studies suggest that it can protect from lung and mouth cancer.

·         Pumpkin is also high in Vitamins B, C and E. These are all important for immunity defense and optimal metabolism.

·         Pumpkin is also a great source of ‘zea-xanthin’ which is a natural anti-oxidant that may offer protection from age-related macular disease in the older adults.

·         It is low in calories and, it tastes GREAT!

 

Now, let’s look at the seeds (pepitas).  I love pepitas as they are so versatile!  But, there is something about roasting the seeds in a bit of butter and season salt that just makes me think autumn. 

·         Pepitas are a great source of fiber, iron, zinc, and mono-unsaturated fatty acids (think heart health). Certain studies suggest that they may actually help raise your HDL (aka ‘good cholesterol’).

·         They are also a great source of tryptophan which can promote better sleep.

·         Studies have suggested that pumpkin seeds can be protective against breast and prostate cancer.

·         Because they are rich in copper, calcium and zinc – they may help with bone density and help stave off osteoporosis.  Also, zinc is important for sperm motility – SO, if you are trying to get pregnant, rather than oysters – give your guy pumpkins seeds!

So, try incorporating this wonder food in your diet and see what it does for you!!
